Chocolate Nut Bliss

This is the recipe you didn't know you've been waiting for!! Honestly, this is so decadently delicious - a picture just can't convey how mouth watering and morish it is. How can something so healthy be this good?! This is best served straight from the fridge and will keep in an airtight container for weeks - but I guarantee you it won't last that long!

TIPS

  • I use a 31 x 25cm stainless steel biscuit tin.

  • Cut before fully frozen if you want uniform squares.

INGREDIENTS
1 cup cashews

1 cup (200g) melted cacao butter
1/4 cup melted coconut oil
1 cup honey

1 cup chopped pecans

1 cup chopped almonds

1 cup cacao powder
1/2 tsp fine sea salt

1/4 cup shredded coconut
(Optional - 1/4 cup chopped sour cherries or incaberries)



 

METHOD
1. Mill cashews to a powder (10secs/speed 8). Set aside.

2. Blend cacao butter, coconut oil and honey. (20 secs/speed 8)
3. Add milled cashews and cacao powder and blend (10secs/speed 8)

4. Add all other ingredients and mix well. (10secs/reverse speed3)
5. Pour mixture into tray and sprinkle on shredded coconut. 
6. Place in freezer to set. Serve straight from the freezer.
