Arrowroot powder is the easily digested starch obtained from the arrowroot plant, Maranta arundinacea. It is valued as a thickening agent especially when a clear or glossy appearance is desired. Arrowroot powder is neutral tasting and tolerates acidic ingredients, such as citrus.
