This raw wildcrafted Irish Moss (Gracilaria) is a vegan thickener and emulsifier that does not need any boiling and is a healthy substitute to gelatin.  May be used to fluff up or firm liquids, shakes, parfaits, mousse, pies, ice cream, nut or seed milks, yoghurt, cheese or pate.
It needs to be washed and soaked before use, and will turn a creamy white to translucent colour and double in volume.
